MASTER CLASS - SOMMELIER

This intensive advanced-level sommelier masterclass jointly conducted by Service a ’la Francaise and At-Sunrice GlobalChef Academy is offered at two levels focusing on French and international grape varieties and their evolution around the world, including knowledge and sale of Champagne and great spirits, sales techniques and ceremonies, personalised service, and evaluation at the end of the masterclass. This training will be facilitated by Laurent DERHE, Meilleur Ouvrier de France (France’s Best Craftsman).

This sommelier training on French and international grape varieties around the world is designed for sommeliers or participants who have a good level of expertise in sommelier skills in order to help them improve their understanding of wine and increase their knowledge of the evolution of different grape varieties around the world. It will strengthen the sommeliers' expertise in sales and customer advice, knowledge of wine grape varieties and their evolution in different regions of the world, and an understanding of the evolution of different wines. It will also cover vintage management, stock rotation, and wine preservation in a very hot and humid local context. The program has been designed to complement other programs previously taken or to be taken for the first time by a sommelier with basic knowledge of sommelier skills. At the end of the training programme, the participants will receive the WSQ Statements of Attainment (SOAs) in Wine Service 2 (TGS-2022012919) and Alcoholic Beverage Preparation – Level 2 (TGS-2022016755) and a joint certificate offered by Service A La Francaise and At-Sunrice GlobalChef Academy.

The objectives of the programme are as follows:

  • Progress in the profession of sommelier with an enhanced knowledge of the characteristics of the main vineyards in the world and the history of grape varieties in the world,
  • Create both classic and original food/wine pairings.
  • Have an in-depth knowledge of different French and global wine regions.
  • Have knowledge of various grape varieties.
  • Master sales, personalized service, and customer relations.
  • Master tasting techniques.
  • Understand the management of vintages, rotation of stocks and conservation of wines in a very hot and humid local context.

The programme is structured around the following concepts, which are progressively addressed through numerous practical exercises throughout the course: 

  •  A review of the fundamentals of oenology (viticulture and winemaking techniques, vineyard history, wine preservation techniques, tasting, differentiation of flavours and aromas, and the influence of terroir).
  • Technical wine tasting to assess a wine's characteristics, evaluate its potential, and know how to highlight its qualities.
  • Knowing and selling Champagne and differentiating the great sparkling wines of the world.
  • Pairing wines with food and customer service: trendy pairings, innovative pairings, and meal accompaniments.
  • Service and sales of fine spirits: Cognac, Armagnac, Whiskey, Rum, White Eaux de vie, Liqueurs.
  • Service and customer relations: wine service protocol, customer advisory techniques, complaint handling, customer rapport psychology, sales pitch and commercial argumentation.
  • Comparison of grape varieties around the world.

The ultimate goal of the 5 days of training is to develop knowledge and mastery of the profession, through the presentation of a wine highlighting its tasting and commercial presentation (food and wine pairings, sales pitch, etc.).

  • For level 1 it is recommended that you have a minimum of 2 years of experience in restaurant service with knowledge of the sommelier profession or be a confirmed amateur.
  • To be eligible for Level 2, you must complete Level 1 or be a practising sommelier. 
  • Enrolment is subject to availability and incomplete applications will not be processed.

           - White-collared shirt / White blouse (No see-through, sleeveless, revealing, designs or patterns)

           - As per the Academy's grooming policy, hair/ head accessories such as caps, hats or any other headgears are not allowed.

6. Training Quality and Outcomes Measurement Survey (TRAQOM) by SkillsFuture Singapore

SSG will conduct the two post-course evaluation surveys in the following manner:

  • The Quality Survey will be conducted after the course end date through an electronic survey. The survey will be emailed to the trainee through SSG’s central survey system.
  • The Outcomes Survey will be administered once a year through a contracted vendor. The survey will be sent to shortlisted trainees who have completed their full qualification course(s) or CU(s).
  • Trainee is to provide your personal email and phone number for SSG to conduct the surveys.
  • All corporate companies registering their staff for training are to avoid using centralized corporate email and have to use their staff email and phone number for SSG to conduct the surveys.
