WSQ Certificate in Food Services (Food & Beverage Service) (Classroom & Asynchronous e-Learning) is a 5-week  intensive food & beverage service programme where participants learn the fundamental knowledge and application skills in food and beverage service, non-alcoholic beverage preparation & food and beverage inventory management and be able to apply them to workplace. This certificate programme also has a combination of transferable soft skills such as customer service excellence and productivity optimisation for food and beverages operations which enables the learner to not only learn how to serve food and beverages but also acquire skills in executing daily food & beverage operations.

WSQ Higher Certificate in Food Services (Food & Beverage Service) (Classroom & Asynchronous e-Learning) is a 6-week intensive food & beverage service programme where participants learn the intermediate level knowledge and application skills in food & beverage service, food & beverage inventory management and wine service and be able to apply them to workplace. This higher certificate programme also has a combination of transferable soft skills such as productivity optimisation for food and beverages operations, customer service excellence, food waste disposal and reduction which enables the learner to not only learn how to serve food and beverages, and also develop skills in supervising daily food and beverage service operations.

WSQ Advanced Certificate in Food Services (Food & Beverage Service) (Classroom & Asynchronous e-Learning) is a 6-week intensive pastry and bakery programme where participants learn the advanced level knowledge and application skills in food & beverage service, food & beverage inventory management and alcoholic beverage preparation and be able to apply them to workplace. This advanced certificate programme also has a combination of transferable soft skills such as budgeting, and effectiveness management which enables the learner to not only learn how to serve food and beverages, and also acquire supervisory skills in managing routine food and beverage service operations.

WSQ Diploma in Food Services (Food & Beverage Service) (Classroom & Asynchronous e-Learning) is a 6-week intensive food & beverage service programme where participants learn the diploma level knowledge and application skills in food and beverage recipe formulation, food and beverage equipment maintenance & food and beverage inventory management and be able to apply them to workplace. This diploma programme also has a combination of transferable soft skills such as learning and development, personal performance management, conflict resolution and budgeting which enables the learner to not only learn how to serve food and beverages, and also acquire managerial skills and competencies in leading the business in food services sector.

At the end of the programme, participants should be able to:

• Follow guidelines to provide positive customer service to a diverse range of customers.

• Identify work area process goals, job specifications and workplace requirements for productivity optimisation, with documentation on productivity performance.

• Receive, check, prepare, pack, and deliver stocks with proper documentation.

• Prepare mise-en-place required for service according to organisation’s quality delivery standards.

• Prepare a wide range of standard beverages using standard beverage preparation techniques.

 

Following is the list of modules participants will learn in this programme:

Food Safety and Hygiene (Level 1): At the end of this unit, the learners will be able to follow food safety and hygiene procedures and policies, as well as maintain the cleanliness and upkeep of premises.

Food and Beverage Service (Level 1): At the end of this unit, the learners will be able to prepare mise-en-place required for service according to organisation’s quality delivery standards. 

Customer Service Excellence (Level 1): At the end of this unit, the learners will be able to follow guidelines to provide positive customer service to a diverse range of customers.

Productivity Optimisation for Food and Beverages Operations (Level 1): At the end of this unit, the learners will be able to identify work area process goals, job specifications and workplace requirements for productivity optimisation, with documentation on productivity performance.

Food and Beverage Inventory Management (Level 1): At the end of this unit, the learners will be able to receive, check, prepare, pack, and deliver stocks with proper documentation.

Non-alcoholic Beverage Preparation (Level 2): At the end of this unit, the learners will be able to prepare a wide range of standard beverages using standard beverage preparation techniques.

At the end of the programme, participants should be able to:

• Manage orders from customers and serve meals according to service standard operating procedures of the organisation.

• Maintain accurate records of the storage and movement of stocks to identify stock discrepancies.

• Provide insights and ideas to optimise productivity in the workplace.

• Address escalated service challenges to satisfy customers’ needs and respond to service opportunities.

Alcoholic Beverage Preparation (Level 3): At the end of this module, the learners will be able to prepare a range of nonstandard alcoholic beverages using advance beverage preparation techniques.

At the end of the programme, participants should be able to:

Absentee Payroll (AP) Funding

A grant to help employers defray the manpower costs incurred when they send their employees for training courses funded by SSG. Absentee payroll at SGD4.50 per hour. Company sponsor is eligible for SGD2,351.25 AP funding for each of their Singaporean, Singapore PR or LTVP+ Holder trainee. Capped at SGD100,000 per calendar year for each organisation. 8. Training Quality and Outcomes Measurement Survey (TRAQOM) by SkillsFuture Singapore

SSG will conduct the two post-course evaluation surveys in the following manner:

  • The Quality Survey will be conducted after the course end date through an electronic survey. The survey will be emailed to the trainee through SSG’s central survey system.
  • The Outcomes Survey will be administered once a year through a contracted vendor. The survey will be sent to shortlisted trainees who have completed their full qualification course(s) or CU(s).
  • The trainee is to provide your personal email and phone number for SSG to conduct the surveys.
  • All corporate companies registering their staff for training are to avoid using centralised corporate email and have to use their staff email and phone number for SSG to conduct the surveys.
