- Understand and apply the principles of food psychosociology.
- Apply the principles of food chemistry.
- Understand the fundamentals of food nutrition and its impact on the human gut microbiome.
- Understand and apply principles of culinary science.
- Conduct a capstone project related to culinary wellness.
The programme covers the following modules:
- Application of Principles of Food Psychosociology: This module enables the learners to acquire the ability to understand and apply the factors that affect the choices and expectations of consumers in their choices of food locally and globally.
- Creative Entrepreneurship: In this module, learners will get an opportunity to develop their own business plan through skills and knowledge acquired from lectures and discussions with instructors, industry experts and fellow peers.
- Application of Principles of Culinary Science: This module focuses on culinary hands-on skills. Learners will learn basic health and hygiene techniques, and knife skills followed by hands-on cooking sessions of the East and the West, including some blue zone culinary practises.
- Introduction to Basic Food Chemistry: The learning objective of this module is for the students to understand the chemical composition of foods, with the chemical structure and properties of food constituents, and demonstrate the chemical changes that food undergoes during processing, cooking and storage.
- Food, Nutrition and Gut Microbiome: This module covers and focuses on understanding the human microbiome and Metabesity.
- Capstone Project: This is the culmination of the 6-month programme that allows students to use all their learned skills and knowledge to create a business plan related to culinary wellness. This also forms a consolidated assessment for the six modules.
