This special Sunday Luxe menu features iconic dishes from different regiond of India - Old Delhi, Punjab, Kashmiri, Karnataka, and Uttar Pradesh. Each dish highlights authentic local ingredients and traditional cooking methods, offering a vibrant blend of spices and unforgettable flavors.

 

Continue the celebrations as we showcase a few vibrant Indian traditions! Enjoy captivating regional classical dance performances, intricate Henna (Mehndi) art, and explore an Indian Deepavali decoration stall. This Masterclass by Chef Satish Madaan offers a festive culinary experience. Participants will learn to prepare two exquisite Shahi Mughlai kebabs: the Makhmali Mattar Ke Kebab, Mouth-melting kebabs prepared with green peas, spinach and melted cheddar cheese, and the Zaffrani Gosht Kebab, minced lamb and chicken mixed with aromatic spices, caramelised onions and seared on cast-iron griddle and drizzled with saffron sauce.

Explore the world of culinary science with us this Sunday as we uncover the chemistry and psychology behind why spices are so addictive. Learn how spices stimulate our senses, enhance flavours, and shape our food preferences. Gain insights from ancient traditions to modern science and deepen your appreciation for the role of spices in our meals.

Prof. Henry is an internationally recognized thought leader in Food and Nutrition science. He was the former Director of the Clinical Nutrition Research Center at A*STAR and the Deputy Director of the Singapore Institute of Food and Biotechnology Innovation. Currently, he serves as Senior Advisor to the Global Centre for Asian Women's Health at NUS and At-Sunrice.
